Penne with Arrabiata Sauce

Today i'm going to put my special ARRABIATA Sauce, and i will combine this terrific sauce with PENNE Pasta, great type of pasta, i use really often this pasta, i liked, and is so easy to combine with other types of sauces..

Remember, is my way of cooking........you can change it if you like...

So We will start to put some water to boil for the pasta first, because is a very easy sauce to make, so if you wait to the water to boil, the sauce it will strengthen up to much, and is not good....

You grab a pan where it will fit the pasta and the sauce, you grab some hot peppers red and green will be perfect, then clean them up, remember no seeds from the peppers, sliced them into pieces and then you grab some garlic, some people slice the garlic, but in this case, just crash the garlic with your hand or with the knife, because we will take of the garlic from the pan....then put some oil to heat a little, and put the garlic and the peppers into the pan, to fry it a little bit, do not burn the garlic or the peppers, the garlic is just to give some flavor to the oil, then when everything is a little fry, take out the garlic, leave the peppers...

Then you add some tomato sauce, use plain tomato sauce, do not use RAGU or any other kind of tomato sauce with other ingredients added, you will give the flavor to the sauce by yourself, there is POMI or other type of plain tomato sauce on the market, that is great...

You add some salt and a bit of oregano in the sauce, and then you put some chop parsley, fresh will be better, and then you leave the sauce for a little while, remember to taste the sauce, if is to sweet, put some salt  on it, or if is to acid, put bit of sugar, but not to much, otherwise it will come sweet ARRABIATA sauce, and we don't want that.

In the mean time, if the water is boiling, put the PENE to boil, and wait for them to be as you like the pasta, some people leave till they are a bit soft, but remember, the pasta is really good al DENTE.......not to soft and not to raw either.

Let the sauce boil a little bit more, and turn down the heat, so like i said at the beginning don't let the sauce to strengthen up to much....when the pasta is ready take the pasta already without water, and put all the pasta in the pan with the sauce, then mix very well and serve, put some chopped parsley over the finished dish to give a little color to the dish.

To get more fancy, you can try a really good red wine, there are great Red Wines in the Market and not to expensive, so a good glass of wine will give you a great taste, and of course A glass of red wine a day may keep the doctor away!!!!!!!!!!!!

  1. This is the second time I am trying this! Last time (2 min fa) it got as far as me typing in the silly word and then took me to a place to sign in to blogger! Actually the 4th time now--this time I will try as anonymous because when I try to sign in under my google name it just brings me around in a loop.

    Do you know the name of the peppers? How small do you slice them? Will this be too hot for me?? lol

  2. OK--I made this tonight! I didn't cook enough pasta for the amount of sauce so it was a little too saucy for me. Also didn't put the fresh parsley on top because it was pouring rain and I didn't want to go out in the rain or the mud! Other than that I thought it was pretty good.

    Still haven't seen another recipe!! Sz
