Penne with Arrabiata Sauce

Today i'm going to put my special ARRABIATA Sauce, and i will combine this terrific sauce with PENNE Pasta, great type of pasta, i use really often this pasta, i liked, and is so easy to combine with other types of sauces..

Remember, is my way of cooking........you can change it if you like...

So We will start to put some water to boil for the pasta first, because is a very easy sauce to make, so if you wait to the water to boil, the sauce it will strengthen up to much, and is not good....

You grab a pan where it will fit the pasta and the sauce, you grab some hot peppers red and green will be perfect, then clean them up, remember no seeds from the peppers, sliced them into pieces and then you grab some garlic, some people slice the garlic, but in this case, just crash the garlic with your hand or with the knife, because we will take of the garlic from the pan....then put some oil to heat a little, and put the garlic and the peppers into the pan, to fry it a little bit, do not burn the garlic or the peppers, the garlic is just to give some flavor to the oil, then when everything is a little fry, take out the garlic, leave the peppers...

Then you add some tomato sauce, use plain tomato sauce, do not use RAGU or any other kind of tomato sauce with other ingredients added, you will give the flavor to the sauce by yourself, there is POMI or other type of plain tomato sauce on the market, that is great...

You add some salt and a bit of oregano in the sauce, and then you put some chop parsley, fresh will be better, and then you leave the sauce for a little while, remember to taste the sauce, if is to sweet, put some salt  on it, or if is to acid, put bit of sugar, but not to much, otherwise it will come sweet ARRABIATA sauce, and we don't want that.

In the mean time, if the water is boiling, put the PENE to boil, and wait for them to be as you like the pasta, some people leave till they are a bit soft, but remember, the pasta is really good al DENTE.......not to soft and not to raw either.

Let the sauce boil a little bit more, and turn down the heat, so like i said at the beginning don't let the sauce to strengthen up to much....when the pasta is ready take the pasta already without water, and put all the pasta in the pan with the sauce, then mix very well and serve, put some chopped parsley over the finished dish to give a little color to the dish.

To get more fancy, you can try a really good red wine, there are great Red Wines in the Market and not to expensive, so a good glass of wine will give you a great taste, and of course A glass of red wine a day may keep the doctor away!!!!!!!!!!!!

My way of Cooking

Before i put any recipes, i will tell give you a little secret about my way of cooking, in some recipes of course you will have to follow each ingredient or follow the recipe step by step, but the 90 percent of the recipes you don't have too, you just need your imagination, or your taste, and if you don't have any experience, you wont need any, just follow me....

One of the things that i do often, is read the recipe and then star cooking, see all the ingredients, and that's it, let flow your taste and imagination.

There are things that you need to know, first of all, try to have every season unimaginable in your kitchen, that will help you give you your own SECRET TOUCH, second, always have White Wine, a cheap wine is really good to cook, you don't need an expensive one the taste will be similar, so it would not change the taste of the food.....

I use lot's of italian seasoning, Basil, Oregano, Laurel, also i use some seasoning like ADOBO, the BADIA brand is really good, has a good taste, or you can use GOYA adobo, also really good, any seasoning will give you a great taste to food.........
Olive oil is really important, also onions and garlic, if you mix these three ingredients, you will have a base for any dish you will like to cook.

So, you will build your way to cook, remember also to taste the food that you're cooking to feel the flavor of your dish.

You can find really good books of Italian Cooking, but remember, read it first, if you are not experienced, do not try it, you can screw up really easy, but never give up, you can follow the recipie, but remember give the SPECIAL TOUCH to your dish.

These books have great recipies, you will learn also, the real italian taste!! If you don't find the ingredients, try to go in any gourmet place, do not spend to much in your cooking, unless you want to fancy up your dish!!!

Introducing myself as a CHEF

Let's start with my passion for cooking.........

Everything starts when i saw my grandfather "Il Nonno" cooking his special, SPAGHETTI with his beef sauce.....was amazing!!!! The taste was indescribable, well i was 5 at that time, and since that day i started to watch more and more my "Nonno" cooking.....

Helping him was a great school for me, the years where passing by and i was more interested in cooking. All my family tried to make my grandfather Meat Sauce, some of them made it like him, but never like him of course......

My italian roots where another push for the italian cooking, but i cooked everything with a bit of italian way.

I remember the first time that i cooked, i had my mom right by my side, and she was tasting how the sauce was coming out, at the end i finally cooked for several people in my house, everybody was happy and delightful by my sauce, and logically the CHEF (ME) was more happy, of course it didn't taste how i was expecting, but it was good.

i have 15 years now cooking, to family and friends, now i have more that 200 recipies to share, and that is my goal with this blog, introducing you to a simple way to cook italian and other kind of food, some of them are invented by time, just with few things in the fridge....or the products that you have in your kitchen.
